Traditional Dry Stockfish

Through Sufi, our parent company, we are of course offering traditionally dried stockfish as well.

Although stockfish, or dried cod, is produced in Norway, it is mostly consumed in Southern and Northeastern Italy. The importance of stockfish in Italy dates back to the 15th century when the Venetian navigator Pietro Querini shipwrecked and ended up in Lofoten in the Northern part of Norway

Captain Querini and his crew met islanders who were drying cod in the sun and wind to preserve it. Impressed by the flavour and convenience of the stockfish, Querini decided to bring some stockfish with him when he returned to Venice 8 months later. This started the long commercial relationship between Norway and Italy. Still today, a large percentage of the stockfish from Lofoten is exported to Italy.
